Yellow beans and celeriac salad with aromatic herbs. Vegetarian recipe.
Quite popular in Eastern Europe, these yellow beans and at the same time celeriac, are not so much used in the west. This is not a international recipe though, it can be made with green beans as well, all the rest of the ingredients are easy to find.
However, should you come across some yellow beans, try it, they are somewhat sweeter and have a softer texture and flavour.
- 200g yellow beans (or green beans)
- 200g celeriac
- 2-3 spring onions
- 1 clove of garlic (optional)
- 1/4 spoon dried chili flakes (optional)
- 50ml olive oil
- salt & pepper
- onion seeds (optional)
- parsley, oregano, lovage, thyme, celery leaves, dill, fennel tops
Boil 1 liter of water, add the beans (cut into 2 inch pieces) same with the celeriac.
Boil for around 10 minutes to keep the beans “al dente”, drain and refresh in cold water to stop cooking.
Heat the oil in a frying pan (keep a couple of spoons for the end), lightly fry the sliced green onions and the garlic for a couple of minutes.
Add the chili flakes, beans and celeriac into the pan, reheat through. Season with salt and pepper. Sprinkle the onion seeds (if used) over the top.
Transfer to a bowl, mix through all the aromatic herbs coarsley chopped and drizle the rest of the olive oil over the top. Serve warm, as a main vegetarian dish, or as a side with meats.
