Stuffed mushrooms recipe. Ham, cheese, veg and quail eggs.
There are stuffed mushrooms recipes and there’s this stuffed mushrooms recipe.
Everything is covered. Protein (meat) from the ham, dairy with the cheese, vegetables with the spring onions. Even fruit, as red peppers are a fruit. Eggs and fungi. All in one in a simple, delicious, tasty dish.

- 3 large mushrooms
- 3 quail eggs
- 25g grated cheese
- 2 slices of ham
- 1/2 red pepper
- 1 spring onion
- salt & pepper
- a touch of olive oil
- fresh parsley (optional)
Simply prepare the mushrooms by peeling them (optional, if the skin is thin then there’s no need for peeling), removing the stalks and taking care that they don’t have any bits inside… Then season with a touch of salt and pepper (careful if the ham and cheese are salty). Stuff them in the order that is in the video above…or indeed in any order you like.
Although the cheese always melts better when on top. Bake in the oven for about 10 minutes, then finish them under the grill to get the top crispy and nicely browned.
