Juicy, tender, melt in the mouth smoked beef ribs.
The simplest way to making short ribs is to throw them on the BBQ or in the oven. But smoked beef ribs…started on the BBQ and then finished in an controlled temperature oven is something else.
There’s a video clip below on how to make them, but below that is also the list of ingredients and the method is described.
- 1 piece beef short ribs (1kg)
- 2 tablespoons olive oil
- 500ml dark beer
- 2 teaspoons each: salt, pepper, smoked paprika, caraway, onion powder, granulated garlic
- 1 teaspoon crushed chili (chipotle best, optional)
Mix all the dry spices together. Coat the meat with some oil and rub all the spice mixture all over, plenty of it. Let to sit for at least 2 hours.
Unless you have the type of BBQ with a lid, or you are prepared to destroy your house oven and smoke the entire place, you can’t really make smoked beef ribs…or smoke anything for that matter.
You could start and finish the ribs in the oven, but you won’t get the nice charring crust on the meat, and no smoke flavour either. There are cheats here, but that’s not the point of this post.
But I’ll presume that you do have a BBQ with a lid. And that you can use wood or charcoal in it. So make a mighty fire, I used wood, and as the flames start to die down cover the BBQ to heat it up to over 300C. Up to 350C would work well. Also heat up the oven to 160C.
Quick (so you won’t lose too much heat), place the meat on the BBQ, cover and let it smoke and seal it on one side, do the same with the other side, about 10 minutes each will do.
Once done, remove, pour in the dark beer and cover with foil. Place in the oven for 3 hours (or until the meat is soft and tender, but about three hours will do). Then uncover, raise up the heat to 220C and cook for further 20 minutes to get the crust back on the meat.
You can now let it rest for a few minutes…but really, it’s so soft that it doesn’t need it.
