Skillet eggs with red and green peppers, quick, easy, tasty.
Made simply in a skillet or a frying pan, this one…pan recipe is tasty, quick and healthy. Well, if you can keep away form the bacon that is. The eggs have their own “baskets” to cook in, although some might escape around the pan. That’s fine and only adds to the originality of the dish.
- 4 eggs
- 1 red, 1 green pepper
- 1 small onion
- 1 tomato (optional)
- 2 spoons olive oil
- salt, pepper & vinegar
- fried pancetta, bacon or lardo optional
Chop the onion and the tomato. You can also skin and deseed the tomato should you wish. Chop the peppers, keeping 4 slices, about 1cm thick. Fry the onions and the peppers in the oil until soft. Add in the pepper slices, break the eggs into them. Add the chopped tomatoes. They are optional.
Bake in the oven for a few minutes until the eggs are done, or cover and cook on the stove, again, for a few minutes. Season at the end with salt and pepper, also a drop of vinegar (apple, cider or white wine) can bring another taste to this simple skillet eggs dish.
