Savoury doughnuts. Savoury Croatian doughnuts “fritule“.
More than a couple of year back one of the first recipes on Intrepid Eats was a sweet mini-doughnuts recipe from Croatia.
A few days back, whist making a larger batch of them, an idea came to mind, what about savoury doughnuts, savoury “fritule“?
So I kept some batter back, and this is what I made.
For the batter, please see this link http://gustomondo.net/fritule-doughnuts-from-croatia/. It’s made the same way, but the sugar and lemon zest are omitted.
- 250g doughnuts batter (see recipe for details)
- 50g Comte cheese (or any other hard cheese to taste)
- 1/2 teaspoon black pepper and smoked paprika
- fresh or dried thyme 1/2 teaspoon
- grated parmesan (optional)
Now mix the finely grated cheese, I’ve used Comte, but it can also work with Manchego, Gruyère, parmesan or even a strong cheddar with the batter. Add the pepper and the paprika. Sprinkle with a touch of salt. Not too much, the cheese can be salty. Mix in the thyme.
Fry the savoury doughnuts in hot oil, on a high heat for 2-3 minutes until they are puffed up and golden in colour. Drain on kitchen towel.
Serve hot, warm or cold, as they are or with grated parmesan on top, and maybe your prefered hot sauce.
