Marinated halloumi cheese, grilled with fresh salad and egg.
- 1 pack halloumi cheese (6 slices)
- 2 eggs
- 1 slice of bread
- chili flakes (optional)
- olive oil
- 1 lemon
- salad veg, radishes, tomatoes, spring onions, salad leaves, etc
Marinade the cheese slices in olive oil, black pepper, thyme and chili flakes (to taste), in the fridge from 10 minutes to 2 hours…as you wish. Boil the egg as soft or as hard as you like.
Cut the bread into cubes, sprinkle with olive oil and fry in a hot pan until the croutons are crunchy. Grill the cheese on a griddle pan, fry in a frying pan or on the BBQ for 2-3 minutes on each side until it’s soft inside and gets a nice crispy coat on the surface.
Arrange over the vegetables and the croutons, place the egg in the middle (slice or dice across the whole dish if you want), and make a quick dressing with two parts olive oil, one part lemon juice, salt and pepper to taste. Sprinkle all over.
