There no need to stick purely to this recipe ingredients. Use red or white cabbage. Chuck in some extra carrots. Coriander if you wish. This fennel coleslaw recipe works well with the listed ingredients, but you couldn’t go wrong by adding whatever you like.

- 1 fennel bulb (around 200 grams)
- 1 medium size red onion
- 1 piece of cabbage (around 200-250 grams)
- a few radishes
- 3-4 spoons mayonnaise
- salt and pepper
- chili flakes (optional)
- vinegar (optional)
The recipe is so simple, there’s really nothing to it. Slice thinly all the ingredients. Mix together. Season with black pepper and chili flakes (if used). Add the mayonnaise and mix well again.
Now you can add some vinegar to your taste. Malt, white wine, apple cider even balsamic if you fancy it. Or season with lemon juice.
Just before serving season with salt. If salt is added sooner, it will draw too much liquid from the vegetables, making them soft and not crunchy anymore. Garnish with some fennel tops.
